Zach Johnson is Head Brewer at Trustworthy Brewing Co., responsible for day-to-day operations of the brewery and all aspects of the beer production process including the quality of beers.
General Manager Robert Parekh
With over 12 years of experience in the food and beverage industry, Robert Parekh epitomizes passion and dedication. As general manager of Trustworthy Brewing Co., he oversees all operations and ensuring the brewery upholds its eight core values of quality, education, passion, fun, humility, genuineness, accountability and responsibility.
After jump-starting his career in 2007 as a beverage manager and mixologist at the Palms Casino Resort, Parekh became the assistant manager at Eve Nightclub.
In 2010, he accepted a position at PBR Rock Bar & Grill at the Planet Hollywood’s Miracle Mile Shops, accounting for a team of over 100 people, before being tapped to become general manager at The Pub at the Monte Carlo Casino, where he maintained an expansive beer program of over 300 beers. Parekh’s genuine desire for furthering his career drove him to achieve the title of Certified Cicerone.
He then made the move to MGM Grand’s TAP Sports Bar as general manager, conceptualizing a service and beverage program, planning and executing special events to drive top-line revenues and developing new, enticing menus. His strategic plans allowed for TAP to expand into new MGM properties in Detroit and Springfield.
Executive Chef J.L. Carrera
J.L. Carrera is the executive chef at Trustworthy Brewing Co. at the Grand Canal Shoppes at The Palazzo, creating great pub fare to pair with the beers brewed onsite and from the flagship Burbank brewery. He moved to the United States from Guatemala in 1985 and began honing his skills in the kitchen at a seafood restaurant in Malibu before starting his career with MCC Hospitality Group two years later. The chef at the time observed Carrera’s potential and trained him in every kitchen position, recommending Carrera as executive chef for the Pasadena outlet of Market City Caffe.
After successful openings of Market City Caffe restaurants in Burbank, Beverly Hills, Brea and the Monte Carlo in Las Vegas, he headed back to Southern California to open Rose City Diner and Market City Caffe in Arcadia. He then took the helm of Morels Steakhouse & Bistro at The Grove Los Angeles before opening the concept in The Palazzo in 2008 as executive chef.
Carrera lives with his wife and two children.
